{recipe} Slow Cooker Honey Soy Chicken

I am in Shanghai right now, and while I usually don’t write while on vacation, the jet lag has me up at odd hours with not much else to do. I was also eager to share this recipe because it was just too tasty not to write up as soon as possible. I have been trying to experiment with crockpot recipes to build up a repertoire of go-to slow cooker dishes, and this one is definitely going in the permanent rotation!

The whole thing takes about 5-10 minutes to put together and everyone loved it for dinner. The leftovers are great on a sandwich with a little mayo, cilantro leaves, and red onion, fried up with rice and wrapped in a crisp lettuce leaf, or in a tortilla with avocados and sliced cabbage with a little drizzle of peanut dressing or rice vinegar.

This crowd-pleasing chicken goes great with a side of sushi rice, steamed broccoli, and this kale and clementine salad with miso dressing.

A note: if you are feeling lazy (as I usually am!) you can put the garlic and onions in the food processor to chop them.

RECIPE: Slow Cooker Honey Soy Chicken
serves 6

INGREDIENTS:

  • 1/2 cup honey
  • 1/2 cup soy sauce
  • 1/4 cup hoisin sauce
  • 1 Tblsp smooth dijon mustard
  • 1 Tblsp sesame oil
  • 1/4 cup white wine
  • 1 inch piece of fresh ginger, peeled and grated
  • 1/2 tsp crushed red pepper flakes
  • 3 cloves garlic, crushed
  • 1 small onion, chopped finely
  • 3 lbs boneless skinless chicken breast, chopped into 3 inch chunks
  • sesame seeds and chopped scallions for garnish (optional)

METHOD:

  • Put honey, soy sauce, hoisin, mustard, sesame oil, wine, ginger, pepper flakes, garlic, and onion in a crockpot. Mix well with a fork or whisk.
  • Add chicken pieces and arrange evenly in the liquid.
  • Cook on LOW for 5 hours.
  • Use tongs or a fork to remove chicken to a serving platter and shred roughly with 2 forks.
  • Ladle a few large spoonfuls of sauce over the chicken and mix gently. Decant remaining sauce to a pitcher and serve on the side.
  • Garnish chicken with a sprinkling of sesame seeds and scallions and serve immediately.

    Quick question do you have to take the chicken out to shred, would it get more flavor if you left it in the juices

    If I cook this later can I put it on high for part of the time or will that alter the sauce in some way?
