{recipe} 2 Ingredient Breakfast Cloud Souffle
This is an easy and impressive breakfast soufflé that combines just 2 ingredients–an egg and a bit of grated cheese–in a delicious and unexpected way. You can really use whatever cheese you like here. I prefer a few gratings of a harder cheese like parmesan, Monterey jack, or gruyere, but a small knob of brie, a crumble of blue cheese, or a chunk of goat or cream cheese would also work well.
This recipe is for one serving, but obviously, it can be easily expanded to make as many as you like! Because, really, who doesn’t want to eat a cloud for breakfast?

Recipe: 2 Ingredient Breakfast Cloud Souffle

INGREDIENTS:
- 2 eggs, separated
- about 2 teaspoons cheese of your choice (grated or shredded if it’s a hard cheese; crumbled if it’s a soft cheese)
METHOD:
- Preheat oven to 400 degrees.
- With a hand mixer or stand mixer, whip egg whites with a pinch of salt until it holds stiff peaks. Spoon whipped egg white into an individual ramekin or other small ovenproof ceramic cup.
- Make a well in the center of the egg white and carefully pour the yolks in. Top with cheese. Use a spoon or spatula to carefully cover the cheese with the egg whites.
- Bake for about 5-7 minutes, until top is lightly browned and hardened. The egg yolk will be soft-cooked and the cheese will be just melted.
- Serve immediately with crusty toast and a spoon.
Just made this for breakfast! Man, it’s fluffy.
