		<description>When the snow was on top of the grill I opted for this method.  Your method of rinsing and re-seasoning and turn/take off heat as the meat continues to cook is spot on. While I saute some fresh mushrooms  I just let the steak rest on a platter with a knob of butter on top.    I also agree with you on choosing the best  quality of beef = rib eye!!</description>
